The restaurant specializes in food in the style of Matamoros, a city in the state of Puebla, especially known for its tacos al pastor-- marinated pork cooked like a gyro. Pastor means shepherd, and manager Alberto Solis (pictured) says that in the old days in the countryside, the cooks would turn the cylinders by hand over a wood fire, in a rustic style, lending the tacos their name. (There are various other explanations on the Internet.) Solis recommends the tripe and cow's head tacos. (They're all $1.)
